This 18" carbon steel wok fits atop the Fourneau Wood-Fired Grill 16" Basic and Deluxe models. It comes unseasoned, ready to break-in.
To use, stoke a fire and place the wok on top of the grill's three internal, welded ribs. The ribs provide a stable three-point base for the round wok. Before cooking, wipe the cooking surface of the wok with a fine film of grape seed oil and allow it to heat and smoke. Do this several times to begin the formation of your natural oil seasoning protective coating.
Cooking over wood-fire in a wok is exhilarating. With a well-stoked fire, you'll create the intense heat you need to properly sear and stir fry ingredients. If you're anything like us, after trying this, you'll never use a wok another way. Over a mellower fire, you'll find it easy to fry your favorite treats in a shallow pool of your favorite high-smoke point oil. French fries, tofu strips, seafood, and battered vegetables are only a fire away!
