FOURNEAU CARBON STEEL
Fourneau carbon steel is an all-steel pan with best in class pre-seasoning. If you are looking for an alternative to teflon-coated and ceramic-coated pans, our steel pan will provide responsive performance and nearly non-stick cooking, when well maintained.
Our pans are produced in small batches in our New Buffalo, Michigan factory. All-steel construction and a welded handle attachment give the pan superior durability while the plant-based coating provides a non-toxic cooking surface for safe and healthy use.
Its ultra-smooth surface is protected with a traditional grape seed oil seasoning. The cork handle sleeve adds a unique aesthetic and insulation from heat.
Oil-seasoned cookware requires care, maintenance, and may require adjustments in cooking technique compared with coated aluminum pans. The seasoning on your pan will change over time developing a unique patina. Unlike ceramic and teflon coated pans, oil-seasoned pans can be repaired and renewed indefinitely. If for some reason you wanted to dispose of you pan, because our pans are 100% steel, they are also 100% recyclable
We recommend breaking in new carbon steel pans by cooking half a dozen items low-temp, high-oil, low-stick items (grilled cheese sandwiches, quesadillas and toasted walnuts are a few of the favorites). While your pan is pre-seasoned, it will benefit greatly from the addition of layers of seasoning and the application of fats during cooking.
Steel pans must be stored dry and away from other wet items as prolonged exposure to water will cause rust to form. While light rust is easily correctable, it's more fun to avoid it in the first place! Your carbon steel pan will perform at it's absolute best if it is seasoned with grape seed oil each time it is used, before cooking and after cleaning and drying.
The pan measures 12" across at the lip, and 1.75" deep. The sloped walls and generous radius make shaking and tossing a breeze.
