Interested in the Fourneau baking system, but already have a baking stone or steel?
Here is an option to consider. We're offering the Fourneau Grande cloche without the cordierite baking stone that is designed to accompany it. If your baking stone or steel is at least 11.5" wide and 15" deep, you will be able to pop your Grande cloche on top and use it to trap steam and heat for a delicious oven spring.
The Grande is precision-machined at the front and bottom openings to create the best baking environment for your bread. We now machine each cloche in our Michigan factory for ultimate precision, ensuring that the cloche will sit tightly on any flat stone or steel.
We recommend baking stones for use in home ovens that run hotter at the bottom. If you've baked with cast iron in the past and experienced bottom-burn on your loaves, the oven is likely running hot on the bottom. We recommend steel as a deck material for use in ovens that run hotter on top. If the top of your loaf is "cementing" before an ear can form or browning before the inside is done, it may be an indication that your bread is receiving more heat from above than from below. Steel will transfer heat to the bottom of your loaf faster than cordierite (baking stone material).
This is also a great kit for commercial bakers looking for multiple cloches to use in a larger oven, either with steel or stone as a deck material.
This kit includes one Fourneau Grande cloche, one cloche hatch, one baking tray, and one tray handle.

NOTE: Fourneau Grande cast iron parts are finished with oil-seasoning. You will need to care for your iron parts in the same way you care for you cast iron pans, by applying oil and refreshing the seasoning. Rust formation is avoidable and correctable. We do not offer returns or exchanges due to rust.
